Carrot Cake Banana Bread Muffins with Cream Cheese Frosting

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.

In a large mixing bowl, peel and mash 3 ripe bananas until smooth.

Pour 1/2 cup of melted butter into the mashed bananas and whisk until well combined.

Add 1/2 cup of brown sugar and 1/4 cup of granulated sugar to the banana mixture and whisk until fully incorporated.

Stir in 1/4 cup of plain Greek yogurt, 1 tsp of vanilla bean paste, and crack in 1 large egg. Whisk until the wet ingredients are smooth and well blended.

Add 1 3/4 cups of all-purpose flour and 1 tsp of baking soda to the wet ingredients. Mix with a spoon or spatula until just combined, being careful not to overmix.
